Isle of Bute Gorse Gin is a highly unique, small-batch craft gin produced by the Isle of Bute Distillery, located in the heart of Rothesay on the Isle of Bute, Scotland. Head distiller Simon Tardivel crafts the spirit in a traditional 200-litre, gas-fired copper pot still named “Audrey,” which gives the liquid greater depth and complexity.
The defining element of this gin is the vibrant yellow gorse flower, which the distillery team handpicks exclusively from the historic grounds of the Mount Stuart Estate on the island.
The distillers macerate the fresh gorse alongside premium botanicals like juniper, coriander seed, angelica, lemon, vanilla, and grains of paradise using pure water drawn from nearby Loch Ascog.
