Simon and Chrissie Fairclough craft Persie Sweet & Nutty Old Tom Gin at a family-owned distillery in Highland Perthshire, Scotland.
The couple founded the boutique brand in May 2016. Subsequently, they converted a historic stables building into a small-batch distillery. The site sits beautifully at the foot of Glenshee on the scenic A93 road. To maintain quality, the production team carefully distills every batch right on-site. Furthermore, they hand-label every single bottle. They passionately operate a 230-liter German copper pot still nicknamed “Phil the Still”.
The Core Flavour Concept
The founders previously operated Scotland’s very first touring gin club. Consequently, they compiled detailed tasting data from 4,000 global gin enthusiasts. They used this feedback to engineer their original product line. Ultimately, they structured their flagship collection like a classic three-course meal.
- The Starter (Zesty Citrus): An explosive 42% ABV blend focusing heavily on fresh lime and blood orange zests.
- The Main (Herby & Aromatic): A dry, deeply savoury 40% ABV gin packed with fresh rosemary, basil, bay leaves, and green olives.
- The Pudding (Sweet & Nutty Old Tom): A full-bodied 43% ABV creamy expression highlighting fresh vanilla pods, almonds, and warm ginger root.
