Wolfburn crafts this Aurora Single Malt Scotch Whisky from spirit matured in a combination of bourbon and Oloroso sherry casks. A long fermentation and slow, gentle distillation enrich the spirit, which the distillery matures on-site in its purpose-built warehouses. At the end of the maturation process, the team marries the casks to create an exceptionally smooth and perfectly balanced dram.
Although a young distillery, founders first established Wolfburn in 1821 in Thurso, on Scotland’s far north coast. Production ceased in the 1850s, but the team started constructing the new distillery in 2012. Whisky production began in 2013, and Wolfburn released its inaugural expression in February 2016. The distillery still makes its whisky the traditional way: by hand, using only the finest ingredients, and without haste. Wolfburn distills, matures, and bottles its whisky entirely on-site.
Official Tasting Notes:
Colour: Ember glow
Nose: Sherry sweetness is followed by aromas of freshly cut grass and autumn fruits, with just a hint of coffee and dark chocolate.
Palate: Floral tones come to the fore, with overtones of spice and vanilla. Fruity sweetness coats the palate, with fruit and nut flavours leading to a warm, soft finish.
Finish: The finish lingers gently; sherry tones are present to the very end. Beautiful.
