This Wolfburn Aurora Single Malt Scotch Whisky is made from spirit laid down in a combination of bourbon and Oloroso sherry casks. It benefits from a long fermentation and slow, gentle distillation, with the spirit laid down on-site in their purpose-built warehouses. At the end of the maturation process, the casks are married to create an exceptionally smooth and perfectly balanced dram.
Although still a young distillery, Wolfburn was first established in 1821 in Thurso, on Scotland’s far north coast. Production ceased in 1850s, and the new distillery’s construction started in 2012. Whisky production began in 2013, with their inaugural expression being released in February 2016.
Their whisky is still made the same way it always has been: by hand, using only the finest ingredients, and without haste. Wolfburn’s whisky is distilled, matured and bottled on-site.
Official Tasting Notes:
Colour: Ember glow
Nose: Sherry sweetness is followed by aromas of freshly cut grass and autumn fruits, with just a hint of coffee and dark chocolate.
Palate: Floral tones come to the fore, with overtones of spice and vanilla. Fruity sweetness coats the palate, with fruit and nut flavours leading to a warm, soft finish.
Finish: The finish lingers gently; sherry tones are present to the very end. Beautiful.
