Kilchoman Cognac Cask 2023 Edition

To begin with, Kilchoman Distillery crafted this highly anticipated limited edition on their farm-based site. You can find this traditional farm distillery located on the historic Isle of Islay in Scotland.
First, the distillers chose a unique path for this liquid. Instead of simply finishing the whisky in cognac wood for a few months, they matured the spirit fully. Specifically, the liquid spent at least six years inside 32 selected 300-litre French oak casks. Furthermore, the distillery sourced this premium wood directly from Tonellerie Bossuet.
Meanwhile, the production team used their classic new-make spirit. They heavily peat this raw distillate to a robust level of 50ppm.
Moving on to the timeline, workers distilled the spirit in 2016 and bottled it in 2023. Ultimately, the distillery supplied a limited global release of exactly 15,100 bottles to the market.
This expression proudly showcases the core philosophy of the brand. The distillers bottle the liquid at a potent 50% ABV. In addition, they completely avoid artificial colouring and non-chill filtration. Consequently, you receive a pure and unadulterated dram.

Official Tasting Notes

Nose: Opens with rich notes of apple and pear, shifting into fresh herbaceous fruits, light honey, warming baking spice, and a dry, delicate peat smoke.

Palate: A very buttery texture. Delivering  upfront flavours of dried lemon, apricot, nutmeg, and cinnamon, layered over toasted oak and sweet barbecue peat smoke.

Finish: Medium to long, carrying over sweet, sugary, and earthy fruit notes with a final hint of fresh citrus
